Pumpkin Waffles with Warm Buttermilk Syrup

I cannot over-emphasize how AMAZING these waffles and this syrup are. I seriously think they are the best breakfast ever! The waffles are flavorful, with the perfect amount of spice and they bake up somewhat crispy on the outside and tender on the inside. I've made them twice and I CRAVE them! I hope you enjoy them as much as we do! 

I did double the waffle recipe to yield 8 full-size Belgian waffles (pictured above), cut the butter in half and compensated by adding a little more milk. We had plenty for our family and enough leftovers for the next day's breakfast. Recipe from my friend Paige Smedley.

2 cups all-purpose flour
2 Tablespoons baking powder
1 Tablespoon cinnamon
1 Tablespoon sugar
1/2 teaspoon nutmeg
1/4 teaspoon salt
4 eggs
1 3/4 cups milk
1 cup pumpkin puree
6 Tablespoons butter, melted
1 Tablespoon vanilla

Mix dry ingredients together and set aside. Separate egg yolks (reserve egg whites) and beat yolks slightly. Add milk, pumpkin, butter and vanilla to the yolks. Add to dry mixture. Beat egg whites to stiff peaks and fold gently into mixture (do not over mix). Spoon into greased waffle maker per maker directions. Yield: 8 full-size Belgian waffles

BUTTERMILK SYRUP
The syrup will double in size when you stir in the baking soda, so make sure your pan is big enough. Recipe from my friend Polly Yoho.

1 cup buttermilk
1 cup sugar
1/4 cup butter
1 teaspoon vanilla
1/2 teaspoon baking soda

Add buttermilk, sugar and butter to a large saucepan. Bring to a boil, stirring constantly. Remove from heat and immediately add vanilla and baking soda. Serve warm over waffles, pancakes or German pancakes. 

Yield: 1 3/4 cups syrup.

Pumpkin Protein Muffins


 I make these at least once a week. They are my go-to post workout snack and my kids gobble them up. I actually have to hide them or they are gone in a day. 

1 cup
Canned pumpkin
1/2 cup
Applesauce
1/2 cup
Plain lowfat Greek yogurt (I like Chobani)
3
Egg whites
1 3/4 cup
Old Fashioned Oats
1/4 cup
Protein powder (vanilla) 
1/2 cup
Baking stevia OR 1 cup sweetener of choice that measures like sugar 
1 tsp
Baking soda
2 tsp
Baking powder
1/4 tsp
Salt
1 1/2 tsp
Cinnamon
1/2 tsp
Pumpkin pie OR Apple pie spice (If you don't have this just add a couple dashes nutmeg instead) 
Optional
Add-Ins: 1/4 cup of chopped walnuts, pecans, or almonds, mini chocolate chips, raisins or dried cranberries. 
Preheat oven to 350 degrees F. Combine all ingredients in blender or food processor. Blend until oats are ground and mixture is smooth. Pour batter into paper-lined muffin tin and bake for 15-20 minutes. Makes 12 muffins. 

*Note: This batter is very moist and a toothpick may not come out clean. They are done when the tops are golden brown.

Pumpkin Chocolate Chip Cookies

I've probably made a dozen different variations of pumpkin chocolate chip cookies, because I love them, but these are, without any hesitation, my very favorite! They are not overly "pumpkin-y" but they are soft and flavorful. I made them with half semi-sweet and half white chocolate chips (because I was out of milk chocolate chips....GASP!) and really liked the variation, but milk chocolate chips are always delicious. The cookie dough tastes a lot like pumpkin pie, though I wouldn't just be eating it by the spoonful... (wink, wink!) Recipe from George Duran on The Food NetworkMakes 5 dozen cookies. 

  • 1 cup (2 sticks) unsalted butter, softened
    1 cup white sugar
    1 cup light brown sugar
    2 large eggs
    1 teaspoon vanilla extract
    1 cup canned pumpkin puree
    3 cups all-purpose flour
    2 teaspoons baking soda
    1/2 teaspoon salt
    1 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/4 teaspoon ground nutmeg
    1/4 teaspoon ground cloves
    2 cups (12-ounce bag) milk chocolate chips (I used 1/2 white and 1/2 semi-sweet chocolate chips)
Heat the oven to 350 degrees F. Spray cookie sheets with nonstick spray or line them with parchment paper.

Using a mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until the mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly beat the flour mixture into the batter in thirds. Stir in the chips. Scoop the cookie dough by heaping tablespoons (or cookie scoop) onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are slightly browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.

Pumpkin Dip

I made this yummy Pumpkin Dip on Halloween night, but I think it would be perfect all Fall and Winter... or any time for that matter! I cut the recipe in half, since I was only serving 10 and the original recipe serves 32! Recipe adapted from Carolina Charm and allrecipes.
This adaption serves about 12-16.

1 small pumpkin (I used a pie pumpkin and it was perfect!)

1/2 of a (15 ounce) can of pumpkin
1/2 of a 5 ounce box of instant vanilla pudding mix {just the powder, don't make the pudding}
1 (8 ounce) container of low-fat whipped topping, such as Cool Whip, thawed

1/2 teaspoon Pumpkin Pie Spice
Cinnamon to sprinkle on top, if desired

Make sure your Cool Whip is thawed in the refrigerator a few hours before you begin.

Mix pumpkin, pudding mix, Cool Whip, and pumpkin pie spice together in a large bowl. Chill for at least an hour before serving. 

Meanwhile, carve your pumpkin! Hollow out the inside and the lid and spoon the pumpkin mix inside. Sprinkle with cinnamon, and serve with fresh apples slices, vanilla wafers, ginger snaps or graham crackers.

Pumpkin Mac & Cheese

Okay, so I really, really love pumpkin. When I saw this recipe in the October, 2011 issue of Better Homes and Gardens, I just had to try it! My kids asked why it was orange and were a little hesitant to try it, but they all liked it and my husband declared it his "favorite mac and cheese ever." It's a unique savory side dish or main course that I'll definitely be making again soon!

2 cups dried elbow macaroni (8 ounces)
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup whipping cream*
1 cup whole milk
4 ounces Fontina cheese, shredded (1 cup)
1 (15 ounce) can pumpkin
1 tablespoon snipped fresh sage or 1/2 teaspoon dried leaf sage, crushed
1/2 cup soft bread crumbs (1 piece of bread, crumbled)
1/2 cup grated Parmesan cheese
1/3 cup chopped walnuts
1 tablespoon olive oil

Sage leaves (optional)

1. Preheat oven to 350 degrees F. Cook pasta in a large pot following package directions. Drain cooked pasta, then return to pot.

2. For cheese sauce, in a medium saucepan melt butter over medium heat. Stir in flour, salt, and pepper. Add whipping cream and milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Stir in cheese, pumpkin, and sage until cheese is melted. Stir cheese sauce into pasta to coat. Transfer macaroni and cheese to an ungreased 2-quart rectangular baking dish.

3.In a small bowl combine bread crumbs, Parmesan, walnuts, and oil; sprinkle over pasta. Bake, uncovered, for 30 minutes or until bubbly and top is golden. Let stand 10 minutes before serving. If desired, sprinkle with sage leaves.

* NOTES: I used whole milk instead of whipping cream and it seemed plenty rich and creamy and saved us a few calories as well! 

If you can't find Fontina cheese, try Havarti cheese instead.  They are very similar.

Crumb-Topped Apple Pumpkin Pie

I LOVE Thanksgiving and am so excited that it's next week! If you can't decide between making a pumpkin pie and an apple pie, this recipe is perfect for you! I like the combination of 2 of my favorite Fall foods in one unique dessert! Recipe from Taste of Home.

1 sheet refrigerated pie pastry (I used my Mom's Pie Crust recipe HERE)
2 cups thinly sliced peeled tart apples
1/4 cup sugar
2 teaspoons all-purpose flour
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon

PUMPKIN FILLING:
1-1/2 cups canned pumpkin
1 cup fat-free evaporated milk
1/2 cup egg substitute
1/2 cup sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg

TOPPING:
1/2 cup all-purpose flour
3 tablespoons sugar
4-1/2 teaspoons cold butter
3 tablespoons chopped walnuts (I substituted pecans)

On a lightly floured surface, unroll pastry. Transfer pastry to a 9-in. deep-dish pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges with your thumb. In a large bowl, combine the apples, sugar, flour, lemon juice and cinnamon. Spoon into crust.


In another large bowl, whisk the pumpkin filling ingredients. Pour over apple mixture. C
over edges with foil to prevent over browning, if necessary. Bake at 375° for 30 minutes.

For topping, combine flour and sugar. Cut in butter until crumbly; stir in walnuts. Sprinkle over pie. Bake 20-25 minutes longer or until a knife inserted into pumpkin layer comes out clean. Cool on a wire rack. Refrigerate leftovers. Yield: 10 servings.

Quick and Easy Pumpkin Chocolate Chip Muffins


I am loving Fall this year! The cooler temperatures, the soccer games, the cute pumpkins everywhere we go, and the amazing colors of the leaves as they change. With all the Fall spirit in the air, I have been craving a good pumpkin chocolate chip something or other. I found this recipe and was thrilled! You only need three ingredients (that I had in my house all ready), 25 minutes to cook, and they taste just as good as they smell. Happy Fall baking!

1 box Spice Cake Mix
1- 15 oz. can pumpkin
1 small bag of chocolate chips


Preheat oven to 350 degrees and line 2 muffin tins with paper liners. Combine cake mix and pumpkin in a medium bowl and mix for about 30 seconds on low speed and then for about 2 minutes on medium speed. Stir in chocolate chips (these can be omitted if you are looking for a healthier alternative). Using a large cookie scoop, fill each muffin cup about 2/3 full and smooth out the batter. Bake for 25 minutes or until a toothpick inserted into the middle of one cupcake comes out clean. Allow to cool slightly and then enjoy!

** This recipe makes about 24 muffins but can easily be doubled. These muffins will freeze well and would make a great snack to pull out of the freezer and pop into a school lunch. They would be thawed and delicious by lunch time!

Pumpkin Cookies

These are my very favorite pumpkin cookies! I make them with chopped pecans or chocolate chips, depending on what I'm in the mood for. Either way, they are delicious!
Recipe from my friend Linda Thorne...

1 cup brown sugar
1 cup canned pumpkin
1/2 cup canola oil
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/2 tsp. salt
1 cup chopped nuts -or- 1 cup chocolate chips (optional)

Beat together brown sugar, pumpkin, oil egg and vanilla. Stir together the baking soda and powder, cinnamon, nutmeg, ginger and salt, then add to the pumpkin mixture. Stir in nuts or chocolate chips, if desired. Bake for 10-12 minutes at 350 degrees F. Makes 3 dozen cookies.

Pumpkin Bread

This is a moist and delicious pumpkin bread recipe that I got at a church activity when we lived in California. The butterscotch or peanut butter chips are a nice surprise that make this bread taste very special. It makes a lot, but the leftovers freeze well...

1 (15 oz.) can pure canned pumpkin
1/2 cup water
1 cup canola oil
4 eggs
3 cups sugar (can sub. half for sugar substitute)
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
3 1/2 cups flour
1 bag (2 cups) butterscotch chips -or- peanut butter chips
  1. Preheat oven to 350° F. 
  2. Blend the pumpkin, water, oil, eggs and sugar until smooth. 
  3. Add the dry ingredients and mix well. 
  4. Stir in the butterscotch or peanut butter chips. 
  5. Pour batter into prepared pans. Follow baking times below, depending on size of pan:
  • 2 large lightly greased and floured loaf pans. Bake for 55-60 minutes.
  • 8 lightly greased and floured mini loaf pans. Bake for 20-30 minutes.
  • 44-48 paper-lined muffin tins.  Bake for 12-18 minutes.

Pumpkin Cheesecake Bars




2 cups finely crushed Gingersnaps (I like "Anna's Ginger Thins)
1/4 c. butter, melted
1/3 c. canned pumpkin
1 Tbs. flour
1 tsp. pumpkin pie spice
3-8 oz. packages cream cheese, softened
1 c. sugar
1 1/2 tsp. vanilla
3 eggs

Lightly grease a 9x13 inch pan and set aside. For the crust, combine gingersnaps and butter in a small bowl. Press mixture evenly into the bottom of prepared pan. Bake at 325 degrees for 10 minutes and then allow to cool.

For pumpkin batter, in a medium bowl stir together pumpkin, flour, and pumpkin pie spice. Set aside.

For cream cheese batter, in a large mixing bowl beat cream cheese with an electric mixer (I used my KitchenAid) on medium to high speed until smooth. Add sugar and vanilla and beat until combined. Add eggs and mix on low speed just until combined. Stir 1/3 of the cream cheese batter into the pumpkin batter and stir until smooth. Pour remaining batter over the crust and spread evenly. Place large spoonfuls of the pumpkin batter randomly over the cream cheese batter. Using the tip of a table knife, gently swirl the two batters together.

Bake for 25-30 minutes at 325 degrees or until the center in just set. Cool completely in the pan on a wire rack. Cover and chill for 4-24 hours before cutting into squares for serving.

Creamy Pumpkin Soup

This soup is comforting and unique... SO perfect for a warm winter meal! 
Recipe from my friend Lisa Cheney.

          3 cups chicken broth
          1 (8 oz.) can diced tomatoes, undrained
          1 onion, finely chopped
          Bay leaf
          1 (15 oz.) can pumpkin
          Just a small pinch of ground cloves and ginger
          Salt, to taste
          1/4 tsp. white pepper
          1 Tbs. lemon juice
          1 cup cream

Optional garnishes:
          Roasted pumpkin seeds (Pepitas)
          Sour cream

Bring broth, tomatoes, onion and bay leaf to boil in a saucepan. Cover and simmer 10 minutes. Remove bay lead and allow soup to cool slightly. Purée in a blender until smooth. Pour back in saucepan and add seasonings. Simmer for a few minutes. Stir in cream, but do not boil. Serve hot with a sprinkle of pumpkin seeds and/ or sour cream. Serves 6-8.

All things PUMPKIN

Our book club decided to rotate every other month and do a cooking night instead of a book night (so fun right?) Each time we have a theme. This month the theme was recipes using pumpkin. I thought I would share a few of the yummy recipes with you. 

Maple Iced Pumpkin Bars
2 1/4 c. flour
2 1/2 tsp. baking powder
2 tsp. cinnamon
1/4 tsp. salt
1 1/4 c. packed brown sugar
3/4 c. butter, soft
2 tsp. vanilla
2 large eggs
1 c.  Libbys pumpkin

Directions: Preheat oven to 350. Combine flour, baking powder, cinnamon and salt in a bowl. In mixer beat sugar butter and vanilla. Add eggs one at a time, beating well after each. Beat in pumpkin then gradually add in flour mixture. Pour batter into a greased jelly roll pan and cook 20-25 minutes. Top with icing and topping of your choice (sprinkles, mini chocolate chips, or chopped pecans) 

Icing:
8 oz. cream cheese, soft
2 Tbs. Butter, soft
2 c. powdered sugar
1 tsp. maple flavor

Cream together butter and cream cheese, gradually add sugar. Add maple flavoring last.


Pumpkin Cake Roll
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
dash of salt
3 large eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
chopped walnuts (optional)

Pour batter into 10x15 jelly roll pan lined with waxed paper. Bake at 375 for 15 minutes.Immediately turn out onto a linen towel dusted with confectioners' sugar. Peel off paper and roll cake up in the towel, starting with the short end. Cool.Meanwhile mix the filling: 

1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
4 Tbs. butter
1.2 tsp. vanilla 

Carefully unroll the cake. Spread filling over cake to within 1 inch of edges. Roll up again. Cover and chill until serving. Dust with additional confectioners' sugar, if desired. slice into pieces. 

Double Layer Pumpkin Cheesecake (sorry no picture)
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
1/2 tsp. vanilla
2 eggs
1 (9 inch) prepared graham cracker crust
1/2 c. pumpkin puree
1/2 tsp. ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1/2 c. frozen whipped topping, thawed

Directions: Preheat oven to 325 degrees. In large bowl combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 c. batter and spread into bottom of crust; set aside. Add pumpkin, cinnamon, cloves and nutmeg to remaining batter and stir gently until well blended. Carefully spread batter in the crust. Bake for 35-40 minutes or until center is almost set. Allow to cool, the refridgerate 3 hours or overnight. Top with whipped topping.

Four-Layer Pumpkin Cake
1 pkg. (2-layer size) yellow cake mix
1 can  (15 oz.) pumpkin, divided
1/2 cup milk
1/3 cup  oil
4 eggs
1-1/2 tsp.  pumpkin pie spice, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup  powdered sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/4 cup  caramel ice cream topping
1/4 cup chopped PLANTERS Pecans
HEAT oven to 350°F.
BEAT cake mix, 1 cup pumpkin, milk, oil, eggs and 1 tsp. spice in large bowl with mixer until well blended. Pour into 2 greased and floured 9-inch round pans.
BAKE 28 to 30 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min. Remove from pans to wire racks; cool completely.
BEAT cream cheese in medium bowl with mixer until creamy. Add sugar, remaining pumpkin and spice; mix well. Gently stir in COOL WHIP. Cut each cake layer horizontally in half with serrated knife; stack on serving plate, spreading cream cheese filling between layers. (Do not frost top layer.) Drizzle with caramel topping just before serving; top with nuts. Refrigerate leftovers.
HOW TO SLICE AND STACK CAKE LAYERS:
Place 1 of the cooled cake layers on serving plate. Make 2-inch horizontal cut around side of cake, using long serrated knife. Cut all the way through cake layer to make 2 layers. Remove top layer by sliding it onto 9-inch round cardboard circle. Frost cake layer on plate with 1/3 of the COOL WHIP mixture. Slide top half of split cake layer from cardboard circle onto frosted layer on plate. Place the remaining unsplit cake layer on a cutting board. Cut into 2 layers as done for the first layer. Repeat process of transferring cake layers to stacked cake layers on plate using the cardboard circle.

Pumpkin Pudding Cake

This is, without a doubt, my very favorite Fall dessert!
Recipe from family friend Allison Killborn. 

Mix and press into a lightly greased 9 x 13" pan:
             1 pkg. yellow cake mix (reserve 1 cup for topping)
             1/2 cup melted butter
             1 egg
Mix and pour over bottom layer:
             2 cups canned Pumpkin Pie Mix
             2/3 cup milk
             2 eggs
Mix well with mixer and crumble over dessert:
             1 cup reserved cake mix
             1/4 cup flour
             1/2 cup brown sugar
             1/2 cup butter, softened
             1 tsp. cinnamon
Bake at 350 〫F. for 50 minutes, or until center is set. Cool and serve with whipped cream or ice cream. Can be warmed slightly before serving. Refrigerate leftovers. Serves 12-14.
