One of our childhood favorites.
1 (12 oz.) can chicken or tuna, drained
1 small onion, chopped
1 c. chopped celery (or green pepper)
1 can cream of chicken soup
1 c. grated cheese (I usually use cheddar)
1/2 tsp. salt
1/2 c. mayonnaise
2 Tbs. lemon juice
3 hard-boiled eggs, chopped
2 c. cooked rice
Gently mix all ingredients together in large bowl. Spoon into a casserole dish and bake for 30 minutes at 350. Top with slivered almonds (optional)
