German Pancakes

1/4 c. butter
2 c. milk
1 c. flour
1/2 c. sugar
4 eggs
1/4 tsp. salt

* Preheat oven to 400 degrees. Put butter in 9" x 13" glass pan and bake for 5 minutes, or until butter melts. Increase oven to 450 degrees. Mix all other ingredients in a blender until smooth. Remove glass pan from oven & carefully pour batter into pan. Return to oven and bake for 15 minutes at 450 degrees. Reduce heat to 350 degrees and bake another 8-10 minutes, or until edges are puffed and browned and center is set. Cut into squares and serve with syrup.

*Serves 6.

Monica, a few years ago I had our Home Teachers & their families over for brunch and served these. One of the women asked me why these tasted so much better than her recipe and I told her....it's the SUGAR. Most recipes don't have any or not much sugar, but these are seriously the best, as far as Puff Pancakes go. When I am in a hurry, I often make these for dinner and my kids love them!

I don't know how, but I have a totally different recipe! Mine is 6 eggs, 1 cup milk, 1 cup flour, and a dash of salt. Mix in the blender and pour into a 9x13 pan with 4-6 Tbs. melted butter. Bake at 425 degrees for about 15 min. or until edges are browned. Also... in Dave's family these are called "Monsters" because they climb up the sides of the pan.
