Oatmeal Cake

One of our favorite desserts! 
*from Nancy Miller

1 c. quick oats- cover with water and set aside
1/2 c. butter
1 c. brown sugar
1 c. sugar
2 eggs, beaten together
1 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. nutmeg
1/2 tsp. salt

Directions: Combine eggs, oatmeal mixture then remaining ingredients. Bake in a 9 x 13 pan at 350 for 30-35 minutes. top with topping...

1/4 c. brown sugar
6 Tbs. butter
1/4 c. evaporated milk or light cream
1 c. shredded coconut
1/4 tsp. vanilla
1/2 c. sugar
1 c. chopped nuts (optional)

Beat until soft, stir in nuts and spread over cake then broil in oven until light brown.
